Chicken Curry Recipe (courtesy of Sasi)

Ingredients:

~400g chicken (wings, cuts, etc.)
1 medium potato (peeled and cut)
½ onion (sliced)
Ginger paste ( ½ table spoon)
Garlic paste (1 table spoon)
1 medium cinnamon stick
1-2 star anise
Chicken curry powder (2 table spoon)
Cooking oil (3-4 table spoon)
Salt (to taste)
½ tomato or tomato sauce (1 table spoon)- optional

Method:

1. Heat oil in wok. Add in cinnamon and star anise.
2. Add in sliced onion after half a minute. Let onion to brown for about 1 minute.
3. Add in garlic and ginger paste and sauté for half a minute.
4. Stir in chicken and mix well. Let to cook for a while and then add about 1 small cup of water. 5. Cover and cook for about 2-3 minutes.
6. Mix in curry powder and stir well before adding required amount of water.
7. Add in potatoes and cover. Cook on medium fire for about 3 minutes.
8. Add in salt and tomato; allow cooking until potatoes are fully cooked.
9. Serve hot with rice.

Tips from me:

This recipe does work, try it out!
When cooking the curry, cover the wok or pan so you get it done faster.
If you can't find cinnamon and star anise, without them the curry is still good.
Try out with other meat like lamb, fish or even prawns!

Todays Menu: Healthy Chicken Porridge

G'day! Today I am going to show you guys how to cook a delicious yet healthy porridge.

Ingredients (for 2 – 3 servings):

1 cup of rice
5 cups of water
3 chicken drumsticks (or 1 chicken breast, but I recommend using drumsticks)
1 potato
2 carrots
¼ onion
1 chicken stock cube
Some salts
Canned fish with black bean / salted fish (optional)


Instructions:

1. First wash one cup of rice
2. Add one cup of rice and 5 cups of water into the rice cooker. Switch on
3. Wash the chicken drumsticks
4. Cut the potato, carrots into cubes
5. Slice the onion.
6. When the porridge is almost ready, put all the drumsticks, potatoes, carrots, onions and chicken stock cube into the porridge. If the porridge is still too thick, add some water
7. Wait for 15 minutes, take out the drumsticks and cut it into slices. Remove the bone
8. Put the meat back into the porridge.
9. Stir the porridge and see if it is still thick. Add water if necessary
10. Repeat step 9 until you think the porridge is ok for you
11. Taste the porridge. Put some salts and oil if necessary
12. Now you can have your healthy chicken porridge together with canned fish with black bean / salted fish.

Today’s Menu – Black Pepper Sauce Chicken and Fried Egg with Onions!

G’day everyone! Today I am going to show you how to cook two easy-to-cook yet mouth-watering dishes.

Black Pepper Sauce Chicken

Ingredients:
2 chicken drumsticks (bone removed)
½ onion
1 tsp of grounded black pepper
1 tsp of whole seed black pepper
1 tbsp of oyster sauce
3 tbsp of vegetable oil
100 ml of water

Instruction:

1. First, remove the chicken meat from the bone. To do this, simply cut one deep line (along the bone) on the drumstick. Then, try to separate the meat from the bone using your knife.
2. Next, remove the tendon from the meat. Grip a tendon firmly with your left hand, and use your knife to press firmly on the meat. Drag until the tendon is removed. Repeat this step until all tendons are removed.
*** If you are rich, just buy the chicken meat.
3. Cut the chicken into small pieces.
4. Marinate the chicken using 1 tsp grounded black pepper. Put it aside.
5. Slice the onions. Put it aside.
6. Heat the frying pan (or wok). Put 3 tbsp of oil into it (when doing this, make sure you reduce the flow of gas!)
7. Add the chicken into the pan. Stir fry the chicken for ½ a minute.
8. Add the slices of onion into the pan. Stir fry for another ½ a minute.
9. Add 1 tbsp oyster sauce and 1 tsp whole seed pepper. Stir fry for another minute.
10. Add 100 ml of water. Fry the mixture until the sauce thickens. Served hot.

Eggs with onions

Ingredients:
3 chicken eggs
½ onion
1 tsp salt
2 tbsp of oil

Instruction:

1. Slice the onions. Put it into a mixing bowl
2. Add 3 eggs into the bowl.
3. Stir the mixture until mixed completely.
4. Add 1 tsp salt.
5. Heat the frying pan. Add 2 tbsp of oil into it.
6. Then, pour the mixture into the pan. Spread the mixture covering the whole pan. Fry for 1 minute
7. Next, turn the egg upside down. Fry for another minute. Served hot.

The dishes are best served with hot, white rice. Enjoy!
